
Beef Tortilla Breakfast Bake
Ingredients
- 1 lb Lean Ground Beef
- 1 Packet Low-Sodium Taco Seasoning
- 1 Can Low-Sodium Black Beans
- 1 cup Fresh Spinach Finely Chopped
- 12 Eggs
- 1 cup Shredded Cheddar Cheese
- 2 Whole-Wheat Flour Tortillas(large burrito size, 10-inch)
Directions
- Preheat oven to 350 degrees Fahrenheit.
- In a skillet over medium-high heat brown ground beef and drain any remaining fat. Mix in low sodium taco seasoning following packet directions. Drain low-sodium black beans and add to the meat mixture. Let cool and set aside.
- Next, whisk 12 eggs in a large bowl. Then add finely chopped spinach, shredded cheese, and meat mixture to the whisked eggs and mix.
- Place tortilla shell in each pie pan. Add egg mixture to pie pan and place in oven. Bake for approximately 30 minutes or until mixture is set.
- Remove from oven. Let sit for 5-10 minutes then cut into wedges to serve.
This recipe makes two pans that have 8 servings in each pan. To bake one pan, cut the recipe in half.
