
Beefy Southwest Soup
Ingredients
- 1 lb Lean Ground Beef
- 1 tsp Olive Oil
- 1 Medium Diced Onion
- 1 Bell Pepper(diced)
- 14 ½ oz Can Low Sodium Diced Tomatoes
- 1 ½ cups Frozen Corn or 14.5 oz Can Whole Kernel Corn(drained)
- 14 ½ oz Can Black Beans(drained & rinsed)
- 1 Packet of Low-Sodium Taco Seasoning
- 3 cups Low-Sodium Beef Broth
Directions
- In a non-stick stock pot, heat oil and add diced onion and bell pepper. Saute' for 3-5 minutes.
- Add ground beef to stock pot and cook until brown.
- Add diced tomatoes, corn, drained & rinsed black beans, taco seasoning packet, and beef broth. Stir and bring to a boil.
- Reduce heat and simmer for 15-20 minutes.
- Serve with your favorite toppings: diced tomatoes, sliced avocado, shredded cheese, sour cream, cilantro, or a slice of lime.
