Build Your Base Beef Chili

Ingredients

  • 1 lb Lean Ground Beef
  • ½ Small Onion(chopped)
  • 1 Green Bell Pepper(chopped)
  • 1 Sweet Potato(1/2 inch diced)
  • 15 oz Can of Reduced-Sodium Black Beans(rinsed & drained)
  • 14 ½ oz Can of Low-Sodium Diced Tomatoes
  • 8 oz Can of Low-Sodium Tomato Sauce
  • 1 cup Reduced-Sodium Beef Broth
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • ½ tsp Garlic Powder
  • ½ tsp Salt
  • ½ tsp Pepper

Directions

  1. In a non-stick stock pot, over medium heat, add the ground beef, onion, and bell pepper. Cook until the beef is browned and the onion and green pepper is softened.
  2. Add diced sweet potato and drained beans. Stir in the tomato sauce, canned tomatoes, beef broth, chili powder, cumin, garlic powder, salt, and pepper.
  3. Bring to a simmer, reduce the heat to low, and cover. Simmer for about 20 minutes, stirring occasionally.
  4. When the chili is done, remove it from the heat and service with toppings of choice: sliced avocado, shredded cheese, or sour cream.
