
Easy Beef Vegetable Soup
Ingredients
- 1 lb Ground Beef
- 1 Large Onion(diced)
- 3 Cloves Minced Garlic
- 1 Can Low-Sodium Diced Tomatoes
- 4 cups Low-Sodium Beef Broth
- 3 cups Frozen Mixed Vegetables
- ½ tsp Dried Thyme
- ½ tsp Dried Dill Weed
- ½ tsp Salt
- ½ tsp Ground Pepper
Directions
- In a large pot, brown ground beef and cook until no longer pink, breaking it up with a wooden spoon as you go, then add diced onion and minced garlic and cook for about 5 minutes.
- Add the diced tomatoes, beef broth and frozen vegetables, thyme, dill weed, salt and pepper. Stir to combine and cook for 15 minutes, stirring occasionally.
